Although it would involve a reboot, why don't you use systemctl to boot into multi-user.target, which doesn't run x-windows
(if I understand what you want to do correctly). That way you don't have to remove anything.

I have installed Centos7.4 on my Threadripper box (also 1950x) and then updated the Kernel to 4.14 from elrepo. Seems stable running a lot of Gromacs tests, with all cores and both GPU's (Geforce 1080's).
Motherboard is an Asus Prime X399-A.

It seems your yum update managed to update the kernel. If so, you need to recompile your Nvidia driver against the new kernel (use the .run file to uninstall, then re-install).

Actually, I have found that installing using the basic graphics driver option (under "Troubleshooting" in the initial install screen ) avoids the whole nouveau issue, and then allows one to install the Nvidia driver without problems.

I have found that disks taken from a former RAID configuration will be ignored by the installer in Centos 7 until the RAID configuration information is erased.
So you may need to connect these drives on a functioning machine and reformat them with whatever facility is available.
