I am new to openldap , would advise if I want to export all data from openldap for backup , what is the command to do that ?

For what?
slapcat puts out the entire context while with ldapsearch you can filter & have more control.

You need root (ldap) login for ldapsearch to show all data if you have protected fields (like passwords - which you should).
Slapcat will make complete dump without any password needed. Although I'm not entirely sure C5 has all the patches needed to run slapcat while ldap is running. I know some fixes were backported to C6...

that mean if no password issue , all field are open , I can use ldapsearch to export all data ? thanks

Do you wish to export the encrypted passwords and import them to another LDAP server? If so that probably won't work 'cause of the salt applied to the passwords (well it depends on what encryption scheme is configured for the passwords).
