I currently have a CentOS 6.5 system using only software RAID (RAID 1) partitions.
I have kept a spare partition for the next operating system so I can install
and dual-boot it until all the software is working and I can make it the
production system.
The CentOS 7 installation GUI shows the physical disks but not the RAID
partitions (as did previous installers) so I have no way of installing it.
So some questions:
1) Am I doing anything wrong? I can't find any other GUI options.
2) If I installed on a plain partition and made it RAID (after installation)
would it even boot?

Most probably you have dmraid devices or md devices with old metadata.
Provide more details about your raids (for example - while running CentOS 6).
Still, you have the partitions available - so get a backup (I would prefer dd images of the 2 disks) and mark the 2 disks in the installer and select 'I will configure partitioning' /or something like that/ .
Then check if you see the old /boot . If not , you might have to destroy the old /boot and recreate it via CentOS 7 anakonda. Then you can create your "/" and select the VG details in order to set it to raid1 type.

Compulsory note:
The 6.5 was released in December 2013.
It has had no support whatsoever after 6.6 was released in October 2014.
The only CentOS 6 now is the 6.10.
Simple yum update converts 6.5 into 6.10 (in principle).
