Libnvirt is pulled in by gnome-boxes which is part of a standard GUI install. If you remove gnome-boxes and its dependent packages like libvirt then they will not come back unless you install something else that has it as a requirement. In which case you probably need it running...
The future appears to be RHEL or Debian. I think I'm going Debian.

CentOS 5 and 6 are deadest, do not use them.
